Everything the software writes lives under the folder holding the program, so a backup is a folder you can copy. Nothing is sent anywhere: it runs offline, and there is no account to sign into.
Settings → Backup / Export lets you back up on demand, and the app also takes one automatically when you close it if anything changed. To restore, open the same screen and pick "Restore from backup" — this replaces the current books with the ones in that file, so make sure it is the right one first.
Yes — Settings → Backup / Export lets you set a second folder (a pen drive, an external drive, a synced folder). Every backup is copied there as well as kept locally. Nothing is ever read FROM that folder automatically, so it cannot be a way for one shop’s data to reach another install.

Your data is never locked or held hostage by anything in this software, licensed or not. The real risk is the same as any file on a computer: if the machine is lost or the folder is deleted with no backup, that copy is gone. That is what the backup feature and the second-folder option are for — use them, and copy that folder somewhere safe every so often.
No. Billing, stock, printing, reports, backup and this chat all work with no internet connection at all. The only things that need it are importing a licence online (offline import also works) and, on Silver, the second-counter connection — which only needs your shop’s own local network, not the internet.
Settings → Users lets you add a user and set a PIN for them, optionally with a security question. A PIN is per user, not per company, so each person billing at the counter can have their own.
Four ways, in order of how easy they are: the recovery code shown when the user was created; the security question, if one was set; the ANEDYA support code (a phone call to support); or a signed reset file your dealer can issue with your registration code. None of these can reveal the old PIN and none of them touch your books.
